Also known as starflower, borage is an herb notable for its vibrant purple flowers and medicinal properties.

Borage is used as either a fresh vegetable or a dried herb. As a fresh vegetable, borage, with a cucumber-like taste, is often used in salads or as a garnish. The flower has a sweet honey-like taste and is often used to decorate desserts and cocktails.

In traditional medicine, borage has been used to dilate blood vessels, act as a sedative, and treat seizures. Both the leaves and flowers of the plant are edible and commonly used as a garnish, dried herb, or vegetable in a variety of drinks and dishes. The leaves are sometimes also ground up and steeped in hot water to brew herbal tea and used to treat a variety of respiratory and digestive disorders. The seeds are used to make borage oil, which is usually applied topically to the hair and skin.

Borage is an annual plant, so USDA Hardiness Zones do not apply. Although the original plants will not come back next year, they do self-seed readily. Don't worry. They are easy enough to pull out and won't become a nuisance.

Borage grows best in full sun to partial shade. Growing borage plants in full sun will give you the most flowers and the stockiest plants.
